Wow- this dish right here is an example of what you can do with random ingredients found in your fridge. I saw spinach, I saw leftover cashew cream, tofu pieces and oat flour and created what I call Delicious Dippers.
I prepared the tofu in long strips so they are easy to dip in the yummy spinach cashew cream. This was my first time using oat flour with tofu, so I decided to coat the tofu and pan sear it. Baking the tofu is also an option if you prefer that cooking method.
Instead of making a traditional pesto, I wanted to try something different with the ingredients that I had. The spinach turned out to be a fantastic green for making the pesto and adding the cashew cream made for a smooth and creamy compliment to the tofu dippers. It’s extremely satisfying and because I’m a huge fan of dipping my food, I had a ton of fun eating it
